Ice Storm and Power-Outage Checklist for OKC Refrigeration

Central Oklahoma loses power to ice storms and wind every year. A before, during, and after checklist to protect product and get refrigeration back safely.

Central Oklahoma loses power to ice storms, straight-line wind, and grid faults several times a year — the 2020 ice storm knocked out power to hundreds of thousands of customers for days. Refrigeration does not like coming back from an outage, and product on a food-safety clock does not wait. Here’s the plan.

Before the season

  • Know your hold times. A loaded walk-in cooler holds roughly 2–4 hours closed; a packed freezer 24 hours or more. Thin product and glass-door units lose the window faster.
  • Have thermometers in every unit and a spare wireless probe with an alarm.
  • Line up backup: a nearby location, a refrigerated-truck contact, a dry-ice source. Dry ice runs about 10 lb per cubic foot of freezer space per day.
  • Label your disconnects so staff can shut equipment down fast and in the right order.

During the outage

  1. Keep every door shut. Post a sign. This is 90% of the battle.
  2. Consolidate product into the fullest boxes, away from doors.
  3. Log the time power went out.
  4. Move priority product (raw protein, dairy, cut produce) to backup cooling if the outage will run long.
  5. Do not open the freezer unless you’re transferring product out for good.

When power returns — the restart sequence

This is where equipment gets damaged. Do not flip everything back on at once.

  1. Wait a few minutes after power is stable.
  2. Start condensing units one at a time, largest first, with 2–3 minutes between each. This keeps compressors from all slamming into warm boxes against high head pressure and welding contactors.
  3. Watch each box — confirm the temperature is actually falling before moving to the next unit.
  4. If a compressor hums and trips, shut it off at the disconnect and call. Don’t keep trying it.
  5. Verify box temperatures are back in range before restocking, and document them for health and insurance records.

After

  • Check product against the four-hour rule: cold TCS food above 41 °F for more than four cumulative hours must be discarded.
  • Itemize any discarded product with values, keep the photos and the timeline, and read your policy on equipment breakdown and spoilage / utility-interruption coverage.
  • Book a post-outage check if anything short-cycled or tripped — a stressed start component or contactor often fails a few days later.
